Yup, I’ve spend the last 3 hours of my evening watching a show about pumpkin chunkin. Wonderful show. I would love to go there this year and see the ‘world championship’.
Maybe if I were a sugar baby or a billionaire.
Day 2 gluten free.
I’ve almost stopped typing ‘glutin’ when I’m looking for recipes and such. I think spelling it correctly is a wonderful step in the right direction.
Food breakdown for the day:
—> Breakfast: Gluten free chex
—> Snack: an Apple
—> Lunch: (not really lunch, but a pre-afternoon-nap snack): a bowl of melon and a yogurt
—> Afternoon snack: trail mix and rice cakes
—> Dinner: Rice and turkey soup thing with tortilla chips and more melon.

Dinner was difficult, I had planned on making some stuffed peppers. Then my friend Katie, who is really having a tough time with Calc II this summer, came over for dinner and some tutoring. She just had some teeth pulled Sunday (ouch!) so the challenge was making a soft dinner that she could eat and a gluten free / citric acid free dinner for me. That would be where the interesting soup comes in.
I am so thankful for all the cooking my mother made me do growing up. It allows me to just throw some stuff in a pot and make a meal out of it. I threw some ground turkey I found when I cleaned out my freezer Monday with some onion and cooked that up, I set about 2/3 of it aside to freeze for a different meal and then added some carrots to cook for a bit. Then I added a pack of seasoned microwave rice and some chicken broth to make it a soup. Yummy!
I also went to the local produce/health food store. It was nice to see how much gluten free food they had and I grabbed a loaf of gluten free bread to eat with some cold cuts I still have in the fridge.
Overall I think today went well, I have just felt shaky all afternoon. I woke up more alert from my nap and have had trouble focusing when talking to people, but with this CSF headache it’s kinda normal. I haven’t had a migraine in awhile. I’m not sure if it’s because I’ve been so careful with my triggers, the medicine cocktail I’m on or because I’ve been focused on this CSF headache.
